Remember — you can do anything for 3 months! Then look at the changes to your stats, and see if you need another 3 months. :-) It’s actually far easier to make a huge change like that, for a short time, than to try to moderate your behavior for THE REST OF YOUR LIFE. You’ll naturally keep some of the habits you developed on the extreme diet, when you go back to being able to eat whatever you want. Like, I couldn’t have salad dressing for months on the elimination diet (no vinegar), and so I eat salads with almost no dressing now. Maybe about 1/4 teaspoon. So you end up eating healthier, but it FEELS like you’re indulging. :-) Good luck!
