My favorite retelling of classic fairy tales was Tannith Lee's Red as Blood -- they're reimagined more as horror, but I absolutely adored the Rapunzel retelling. It's stayed with me for over 40 years. That's a powerful story!They're not so much feminist as questioning what is good/bad, right/wrong, and how do we know?
More recently, Zombies Need Brains did an anthology called Shattering The Glass Slipper. And I have read multiple fantasy novels where the "monster" is no such thing, often painted that way to hide the nefarious deeds of people in power.
And look up Linda Caroll's true fairy tales series here on Medium. (https://medium.com/@lindacaroll/list/fairytales-6ae419dc6328) Since the Brothers Grimm were transcribing oral histories, all of their stories did really happen. Just at a far enough remove to make the details fuzzy.
