I just kept saying, “I can do anything for 3 months.” Because that becomes your life. Going to the grocery store, making fresh food, eating fresh food… you don’t go out with friends, you don’t have time to write, it’s work, prepare food, eat food, sleep and repeat. But yeah, if the alternative is a lifetime of insulin shots, a liver transplant, or something even worse? 9 months (3 intervals of 3 months at a time — I didn’t start by saying I’d do it for 9 months) is a small price to pay. Although there are admittedly people who disagree. I’d rather have my health. I felt kind of sorry for my poor husband, since he didn’t have a bum liver that necessitated such an extreme dietary change. But his dad died of diabetes, so he figured it was a good idea to get ahead of the curve.
