I got it in a meal kit from Home Chef. It has a thin, waxy rind, which you leave on, so it's most similar to a summer squash or zucchini. It tastes similar to zucchini, too, but without all the seeds. It holds its texture better than zucchini, and stayed in cubes even after browning, while zucchini tends to get overly soft and squishy in my experience. It's supposedly widely available in the southwest of the US, and is grown in Florida and California. The one I had was stickered as coming from Argentina, so it would probably be available in any supermarket that imports a variety of fruit and veggies. I'm guessing Whole Foods carries it. :-) My local supermarket, probably not.
